Alugbati salad with mango dressing

 

The texture of the mango eliminates the need for any oil in this dressing. In whole food plant based eating, the less processed items the better. Plus, it reduces the additional calories!

Adjust Servings
3 bunches Alugbati, leaves only
2 bunches Kangkong leaves and stalks
2cups chopped tomatoes
1 wholechopped purple onion
1 whole diced yellow mango
Dressing
1 whole diced yellow mango
1/4cup balsamic vinegar
salt and pepper to taste

Directions

Salad
Toss all salad ingredients in a bowl. Serve with dressing on the side.
