1tsp oil | |
4tsp ginger, minced | |
4tsp garlic, minced | |
4tbsp scallions white and light green | |
4cups vegetable broth | |
1 1/2cup white rice | |
1cup panko crumbs |
Garnishes
sliced tofu | |
sliced scallion dark green parts | |
bokchoy | |
wild mushrooms | |
Hainanese chilli sauce | |
scallions -ginger sauté | |
soy sauce | |
EGG REPLACEMENT | |
1tsp ground flax seed | |
3tsp water | |
Mix these two together, this equals one egg |
Directions

Garnishes
Blanche all garnishes in salt water for 2 minutes.

For rice
Sautee garlic,ginger, scallions with salt and pepper.
Mark as complete

Add rice and sauté a little more.
Mark as complete

Add broth and cook till soft.
Mark as complete

For tofu
Dredge in flour.
Mark as complete

Next, dredge in egg wash. If you want a vegan substitute, mix 1 tsp ground flaxseed with 3 tsps water. This equals 1 egg. You may dunk the tofu in this mixture.

Coat with panko bread crumbs.
Mark as complete

Fry till golden brown.
Mark as complete
9.
Assemble
Place the cooked rice in a bowl.
Mark as complete
10.
Top with all garnishes and fried tofu.

Serve with a bowl of broth on the side, along with sauces.

Notes
Hainasese sauces and ginger-scallion sauté can be bought ready made at the store.
