Watermelon Gazpacho
This gazpacho was taught to me by my mom and is served during the warmer summer months when watermelon is abundant. Make this recipe using any watermelon that isn’t as tasty or that’s almost about to get over ripe!

1 large tomato, cubed | |
4cups watermelon, cubed | |
1/2 cucumber, cubed | |
1/4 onion, cubed | |
1/2 - 1 green sili, seeds removed if you want it mild | |
1tsb wansoy | |
salt and pepper to taste |
GARNISH
wansoy | |
grated singkamas | |
chopped onions |
Directions

WATERMELON GAZPACHO
Place everything in a blender and blend till smooth. Garnish with onion wansoy and singkamas .
