Patola Curry
Patola is a vegetable that everyone is familiar with, but is only eaten in a couple of ways- with miswa or ginisa with some meat. I tried using patola as a curry and its texture helped to make the curry thicker.
Tip- don’t over cook the patola and will retain a little crunch

2 whole Patola, sliced into rounds | |
2cups coconut milk | |
1teaspoon turmeric powder | |
1 tablespoon curry powder | |
1 dry bay leaf | |
1 diced onion, red or white | |
1teaspoon ginger, diced very thinly |
Directions
1.
Heat up a pan. Add 2 tablespoons of the coconut milk.
Mark as complete

Add the onions, curry powder, ginger and turmeric and sautee on low heat.
Mark as complete

Add the patola and coat in spice mixture. Slowly add the rest of the coconut milk.
Mark as complete
4.
Simmer for 10 minutes. Don't over cook the patola. Serve hot.
