Camote with Chickpea toppings

11 whole camote | |
1 can or 1/2 cup dried chickpeas chickpeas | |
1whole tomato, diced | |
3 sprigs3 wansoy or coriander | |
1/2 red onion, diced | |
22 whole kalamansi |
Directions
1.
Peel the kamote and boil until tender.

Meanwhile, drain the chickpeas from the can or boil the dried ones.

In a bowl, squeeze the calamansi over the chickpeas.

Add the diced onion, tomatoes and chopped wansoy.

Season with salt and pepper.

Mash the boiled kamote down the middle. Top with the chickpea mixture.
