Camote with Chickpea toppings

Ingredients:

11 whole camote
1 can or 1/2 cup dried chickpeas chickpeas
1whole tomato, diced
3 sprigs3 wansoy or coriander
1/2 red onion, diced
22 whole kalamansi

Directions

1.
Peel the kamote and boil until tender.
Mark as complete

Meanwhile, drain the chickpeas from the can or boil the dried ones.
Mark as complete

In a bowl, squeeze the calamansi over the chickpeas.
Mark as complete

Add the diced onion, tomatoes and chopped wansoy.
Mark as complete

Season with salt and pepper.
Mark as complete
6.
Mash the boiled kamote down the middle. Top with the chickpea mixture.
